The Challenge Continues

Another installment of the Great Zucchini Challenge coming your way! In this post, I'm sharing an option for both dessert and dinner. Let's start with the dessert, since life is short, ya know? :)


Ginger Zucchini Bread with Lemon Glaze

I used this Bon Appetit recipe. They always have some creative and cutting-edge flavor ideas, right up there with Epicurious. As you know, I can't just leave a recipe as it's written. (Like music.. I just have to embellish!) Instead of the spiced streusel topping they suggested, I made a simple glaze with lemon and powdered sugar. Also left out the cardamom; that's a spice you really have to be in the mood for, if you know what I mean.


The texture is a bit more cake-like than your standard quick bread, but still gets that signature crack at the top. Wonderfully moist, as anything with zucchini should be! Overall, this is a "would bake again."

Gourmet Grilled Cheese Sandwich

The sandwich of summer (kind of like Blueberry Zucchini Cake is the dessert of summer. Oh hey, there's another use for zucchini! Was that too subtle? Haha!) The gourmet grilled cheese is always the most anticipated supper of the garden season. We've been making these every summer for at least 15 years, so if that doesn't tell you how good it is, I don't know what would!

I wonder how blueberries would work in that zucchini bread with the lemon glaze? Too bad I'm gluten free😅

I bet that would be pretty good! Also, King Arthur Flour makes a measure for measure GF flour. That might be worth trying!
